Fairview Wine Estate

Cheese and wine pairing

Fairview is a working farm, housing a collection of micro-businesses all sharing in a common goal – to create artisanal and sustainable produce, with a focus on fine wine and cheese.

They’ve been caring custodians of the land since 1693, and they invite you to come and visit them to see for yourself how their farm operates, supports the environment and contributes to a more holistic lifestyle.

Everything they do is driven by the philosophy of being honest, honouring their heritage and ensuring that ingenuity perpetually flows from their soils and cellars and straight into the heart of your relationship with them. After all, at Fairview, they do things differently.

Dieu Donne

Chocolate and wine pairing

You will appreciate the name “Dieu Donne” (God Given), when you see the views from this estate over the Franschhoek Valley!

The farm is situated high on the steep south-west facing slopes of the Franschhoek mountains, which tempers the sun. This cooling effect ensure slow ripening of our grapes.

Thanks to cool summer conditions and unique soils from weathered granite with a rocky topsoil, called ‘Greywack’, the vines do not show excessive vigour, nor do they over-produce.

These special soils do not get irrigated, further concentrating the flavours and characters of Dieu Donné’s terroir in the grapes. These exceptional conditions give Dieu Donné wines their special character.
